  • Bean Soup

    January 5, 2016, Prescott-  This is one of those periods when the challenges that get thrown at me, by the Universe, however maudlin they may be next to the plight of countless refugees, come to be seen as blessings.

    I have resolved the financial challenge that hit me as soon as I got back here, and the compensation will be in my hands on Thursday.  In the meantime, I am warm, dry and, when I’m not working, occupying myself at home with many of the things that get put off, in the course of a busy life.

    One of those things is inventorying the types of beans I have, sitting in the cupboard, and readying a multi-bean soup.  With my crock pot poised and ready, I should have a hearty series of meals awaiting me tomorrow morning.  Beans take time, but sustain me, in the few instances of this First World existence that I find the wallet empty.

    Meanwhile, as I ignore calls and e-mails asking for the money I don’t have, my preparations for a more solid future go on.  It’s been a good morning, thus far, and I aim for the afternoon to be just as fine.

  • When I have no money for food, I have raman, spaghetti, and rice. They don't offer any protein like your beans, but I guess I never had the patience for soaking the beans, nor a good recipe of how to cook them. Perhaps you could pass one along.

    I too, when considering the plights of others, am grateful for my life, and what I have. Prayers go out to the homeless and those in war territories, especially in this time of cold.

  • I put everything in the crockpot-what some of the ladies in our community call "the single man's slave". I am slow cooking the soup now, and the beans will be soft enough by 10 PM or so. It will make great meals, these next few days. I also love spaghetti, and prepare sauces in the crockpot, as well.

  • I have had some delicious multi-bean soups. However the black eyed pea is not among the beans I favor. I've been toying with the idea of putting together a bean soup lately. I'll have to wait until the current black eyed pea soup has been consumed...

  • @murisopsis: I have had black-eyed peas, prepared Carolina-style, but never in a soup, that I recall,
